WINE LIST CREATION & EDUCATION

Put the same care and creativity into your wine menu as you do with your food menu.

THE ULTIMATE PAIRING?

Wine and food are historic partners. Wine by itself or food by itself can be very enjoyable, but pairing wine with food or food with a wine is one of the ultimate dining experiences.

Restaurants, bistros, and cafés across the country have been putting more and more emphasis on sourcing organic, fresh, and seasonal ingredients for their food menus. It’s time to extend that same thoughtfulness into your wine program.  Let the “Winesman” help you build a wine list that will compliment your food menu. REMEMBER: Wine is Food!

OUR SPECIALTY: REAL WINES

Can you taste the difference between a homegrown tomato and a hothouse tomato? Can you taste the difference between cane sugar and artificial sweetener? Can you hear the difference between a song on vinyl and the same song via .mp3? Are you favoring organic products when shopping at the grocery store or farmers market? If your answers are “yes”, then let the “Winesman” help you develop a wine list that focuses on taste, value, diversity, longevity, and sustainability.

A PHILOSOPHY OF TASTE

When I first got into the wine business professionally, I was tasting many wines on a daily basis. I was honing my palate and learning the nuances of regions, grapes, soil types, and wine styles. After tasting thousands of wines, the wines that really resonated with me, were the wines that were made with a more ecological approach in the vineyard and minimal processing in the cellar.

These wines make better pairings with food than conventionally made wines. They have more vitality, more complexity, and once opened, these wines evolve over the course of a few days. I have dedicated my professional career to understanding, uncovering, and researching wines made with Sustainable, Natural, Organic, and Biodynamic® methods.

WINE LIST

Let the “Winesman” help you create a wine list that compliments your food and offers your customers real wine choices.

BY THE GLASS PROGRAM

The number one complaint that I hear about from consumers is that the wines by the glass list is overpriced and underwhelming. Let us create a program that attracts more glass pour sales and one that is informative.

EDUCATION

Need staff training on wine education and appreciation? Would you like to hone your own wine knowledge?

PROFITS

There are many real wines at all price points. The key is being able to identify these wines, promote these wines, and see your sales and profits increase.

FOLLOW YOUR PALATE

One of the undeniable truths about wine is that there are no constants. It’s the fascinating and frustrating side of the wine world.  The amount of variables in each vintage, grape, soil type, and process is mind-boggling. DO NOT FEAR! There are so many different flavors, styles, and tastes awaiting you. Let the “Winesman” help you on this journey of discovery and joy. Free yourself from the taste of sameness.

MY COMMITMENT

My commitment is to bring my vast knowledge of and passion for real wines, food pairings, wine service, production, storage, and stemware to your establishment or residence. Stop being influenced by the glossy magazines! Stop getting stuck with supermarket wines. Expose yourself to the real thing and taste the difference.

RECENT WORK

I have been responsible for creating some of the most dynamic and exciting wine lists in Portland and beyond. I am most proud of my ongoing work with Holdfast Dining, The Winesman,  and my own wine brand Golden Cluster. As well as my past work for Twisted Filipino, Han OakMuselet, Sauvage et Fausse Piste, Limited Company, and Alu. Check out some of my sample menus below, as well as, a few mentions of my wine lists by local and national media.

I ALSO LOVE TO WRITE & SHOOT

I’m no blogger, but I do enjoy writing about wine when there is something interesting to say. I also enjoy creating personalized tasting notes for wineries and for staff trainings. However, I much prefer the use of photography and video to convey my passion for wine and the dedication by the real people behind them. Check out the videos below of some of my wine adventures.
